I remember when I first started fermenting. It felt like a magic trick to transform cabbage with just water, salt, and all the microbes I couldn't see, into a delicious flavorful sour condiment.

It was so exciting, I couldn't stop eating them. I knew I was onto something because I could feel the difference they made in my body. After having struggled with candida and low immune function for years, ferments became my medicine.

Making ferments is something we have evolved doing, as they were the first form of preservation of our foods. And I believe we need them now more than ever.

I love teaching ferment classes, and I'm looking forward to sharing a few of my favorite ferments as we make them together in our own kitchens!
